Bhindi Gosht




A tasty recipe of Bhindi Gosht with photo tutorial is here!

INGREDIENTS:

Mutton, 1/2 kg (with bones)
Lady fingers (bhindi), 8-10 small
Onion, 2-3, roughly chopped
Tomatoes, 2, roughly chopped
Turmeric, 1/2 tspn
Garam masala powder, 1 tspn
Red chilli powder, 1 tspn
Ginger-garlic paste, 1 tspn
Coriander powder, 1 tspn
Cumin seeds, 1/4 tspn
Shahi jeera, 1/4 tspn
Cinnamon, 1stick
Cloves, 2-3
Salt, to taste
Oil, 2 tblspn
Coriander leaves, 2 tspn, finely chopped


RECIPE:


  • Marinate mutton with 1/2 tspn of Ginger-garlic paste and 1/2 tspn of salt. Keep aside.
  • Cut onions tomatoes and just slit lady fingers half not cutting wholly.

  • In a pressure cooker, add 1 tblspn of oil.
  • When it becomes hot, add cumin seeds, as it crackles add shahi jeera, cloves, cinnamon. Fry for 30 seconds.
  • Add 1/2 tspn of turmeric, 1/4 tspn of red chilli powder, 1/4 tspn of coriander powder and little salt in oil.
  • Add lady finger's and fry on high flame for 4-5 mins.
  • Bring it out in a plate.


  • In the same cooker add 1 tblspn of oil and fry onions till golden brown.
  • Add tomatoes and put remaining dried spice, red chilli powder, coriander powder, and 1 tspn of garam masala powder. Fry till masala leaves oil.


  • Add marinated mutton and fry them over high flame for 5-7 mins then cover cooker with its lid. Cook till 3 whistles.
  • Open the lid and add fried lady fingers.

  • Fry for 5-7 mins.
  • Garnish whith coriander leaves.
  • Serve it with roti or as a side dish to rice 😊
  • If you want gravy like consistency you can add hot water while adding lady finger's to the mutton and cook for 1 more whistle.

Tahari (a tasty treat)



Tahari is basically a Hyderabadi version of mutton pulao. Its aromatic and delicious treat for everyone who have it. So let's get started with the recipe with stepwise photos to understand better.


INGREDIENTS:
  • Mutton, 1/2 kg
  • Rice, washed and soaked 3 cups (1 cup= 250 gms)
  • Ginger-garlic paste, 1 tspn
  • Shahi jeera, 1/2 tspn
  • Green chillies, 3-4
  • Onion, sliced roughly, 3-4
  • Tomatoes, roughly chopped 3-4
  • Potatoes, 2 cut halved
  • Curd/yoghurt, 1cup
  • Red chilli powder, 1tspn
  • Turmeric, 1/2 tspn
  • Cloves, 2-3
  • Bay leaf, 1
  • Cinnamon, 1 stick
  • Coriander and mint leaves, 1/2 cup
  • Oil, 2tblspn
  • Lemon, 1 tspn



RECIPE:

  • Marinate mutton with Ginger-garlic paste and salt, keep aside for 1/2 an hour.
  • In a vessel, add oil.
  • Once it becomes hot, add in whole garam masala i.e shahi jeera, cloves, cinnamon, bay leaf. Stir for 30 secs.
  • Add onions and fry till golden brown.
  • Now add tomatoes and sliced green chillies.
  • Add all the dried spices i.e red chilli powder, turmeric.
  • Add potatoes.

  • Add chopped mint and coriander leaves.
  • Fry till tomatoes become tender. 
  • Add marinated mutton and fry on high flame for 10 mins.

  • Now lower the flame and cook till mutton is tender.
  • Add curd and cook till the oil comes on top.
  • You can cook mutton in a separate cooker till its tender and add at the same stage mentioned above.
  • Now add 6-7 cups of water. Check for salt and adjust.
  • When the water comes to boil, add soaked rice. Lemon juice.

  • Cook till all the water is dried. Lower the flame.
  • Give 'dum' and wait till you see air coming from sides.
  • Your delicious Tahari is ready.
  • Serve it with curd raita.

Mutton Do Pyaza



Mutton Do Pyaza, is a mutton curry which is usually of thin consistency and cooked with all the masala together. So let's look at the recipe below with step by step photos to help make you understand better.


INGREDIENTS:

  • Mutton, 1/2 kg
  • Onion, 5-6, roughly chopped
  • Tomatoes, 3-4, roughly chopped
  • Ginger-garlic paste, 1tblspn
  • Green chillies, 2-3, slit in half
  • Red chilli powder, 1 tspn
  • Garam masala powder, 1 tspn
  • Coriander powder, 1tspn
  • Salt, as per taste
  • Coriander leaves, 2 tspn, chopped
  • Cloves, 3-4
  • Cinnamon, 1 stick
  • Bay leaf, 1
  • Shahi jeera, 1/2 tspn
  • Oil, 2tspn


RECIPE:
  • Wash mutton thoroughly and drain all the water.
  • In a pressure cooker, add washed mutton.
  • Add Ginger-garlic paste, chopped onions, tomatoes, coriander leaves.
  • Add red chilli powder, salt, and all the whole garam masale listed above.

  • Add two tspn of oil, mix them all well.

  • Pressure cook it, for 3 whistles. Keep it on high flame for one whistle then lower the flame and cook till mutton is tender.
  • Boil water and add to the mutton depending how thick curry you want.
  • Do pyaza is usually thin curry.
  • Cook for more 5-7 mins, adjust salt if needed. Switch off the flame.
  • Garnish with coriander leaves.
  • Serve it with roti, rice and salad.

Easy Potato Curry


INGREDIENTS:


  • Potatoes, 4-5 boiled
  • Tomatoes, 2
  • Cumin seeds, 1/4 tspn
  • Green chillies, 2 slit half
  • Curry leaves, 3-4
  • Turmeric, 1/4 tspn
  • Red chilli powder, 1/2 tspn
  • Coriander powder, 1/2 tspn
  • Garam masala powder, 1/2 tspn
  • Salt, as per taste
  • Curd, 1 tblspn (optional)
  • Oil, 1/2 tblspn
  • Coriander leaves, to garnish
  • Few Mint leaves



RECIPE:

  • Mash boiled potatoes, keep aside.
  • Heat oil in a pan, add cumin seeds, when it splutters add curry leaves, slit green chillies. Stir.
  • Add tomatoes. Add turmeric, red chilli powder, coriander powder, garam masala powder. Stir well.

  • Fry till it becomes tender.
  • Add mashed potatoes.
                   
                  
  • Fry for 4-5 mins.
  • Add in curd, adding curd is optional, you can add water depending how thick curry you want.


  • Mix well, add mint leaves and salt, cook for more 5-6 mins.

  • Serve it with puri or roti.


TIPS:

  • If you are not adding curd, add little amchur powder for little sour taste.
  • If your curd is too sour, add little sugar to balance the taste.
  • It is usually served with puri, but it was too heavy for my stomach so I made roti's.

Delicious Mutton Biryani



Biryani! The name is enough! Coming from Mughal origin it has seen so many variations and methods. Today plenty of Biryani versions are made, schezwan biryani, paneer biryani, kerala biryani, this that aah, that the real authentic taste is seem to have lost somewhere. So, below is the authentic recipe of Mutton Biryani with step by step photos to help you understand the procedure more clearly.

INGREDIENTS:


  • Mutton, 1Kg
  • Rice, 1.25 kg
  • Oil, 3-4 cups
  • Onion, finely sliced, 4 cups
  • Tomatoes, finely chopped, 2 cups
  • Ginger-garlic paste, 2tspn
  • Cloves 4-5, Cinnamon sticks 2, bay leaf 2, Shahi jeera, Cardamom 2-3
  • Curd/yoghurt, 1cup (250 ml)
  • Green chillies, 4-5 sliced half
  • Tumeric, 1tspn
  • Red Chilli Powder, 2 tspn
  • Garam Masala Powder, 1/2 tspn
  • Salt, to your taste
  • Coriander leaves, finely chopped 1 cup
  • Mint leaves, 1/2 cup
  • Lemon, 1



RECIPE:

  • Marinate mutton with 1 tspn of salt, ginger-garilc paste for 1 hour.
  • Wash and soak rice for 20 mins.
  • In a wok, add enough oil to fry onions till golden brown and caramelized.
  • The onions should be looking like in the picture below.



  • Now in the same wok in which you fried onions, add 1tblspn of oil.
  • Add 2-3 cloves, 1 cardamom, shahi jeera. Fry for 30 seconds.
  • Add chopped tomatoes, and dry spices i.e, red chilli powder, tumeric, garam masala powder. Stir.
  • Cook till the tomatoes become mushy.
  • Add 2-3 green chillies.
  • Add marinated meat, and cook for 5-7 mins on high flame then low the flame and cook till oil comes on top. Add some fried onions.
  • Add in curd, and cook again till the meat is tender. You can use a pressure cooker too.
  • Add few drops of lemon juice.


  • Take a big vessel, add sufficient water to boil rice.

  • Add mint leaves, shahi jeera, bay leaves, remaining whole garam masala, sliced green chillies.
  • When the water comes to boil, add the soaked rice, few drops of lemon juice and cook till its 80% done.

  • Drain the water through a big seive.
  • Now, check if the meat has become tender. Add coriander and mint leaves to it, check for salt and spice.
  • It is to remember the meat masala should have little more salt and spice as when assembling with rice it should balance.
  • Now in the same vessel you boiled rice, add some oil, spread evenly everywhere.
  • Add the half of the rice and layer meat masala gravy on rice.



  • Add some fried onions, few drops of lemon juice, oil in which we fried onions and mint and coriander leaves.

  • Now layer the top with the rice.
  • Take tblspn of milk, add in food color of your choice and sprinkle it on the top layer of rice.
  • Spread fried onions, mint leaves, coriander leaves, and 1-2 tspn of oil in which onions were fried.

  • Give it a dum, i.e cover the vessel with its lid and keep something heavy so that air does not come out.
  • When you see air coming out naturally, swith off the flame.
  • Mutton Biryani is ready!
  • Serve it with cucumber salad or curd raita.


Notes:
  • While frying onions, dont stir it too much, as onions become mushy. Fry it on high flame and with enough oil.
  • Mutton should be of young animal, it gets tender easily and tastes better.
  • Make sure to make the meat masala, gravy like as in dum it dries to much extent.

Masala Mutton Gravy


Many of us love mutton gravy with parathas and roti's. Different regions have different methods and recipes for making the mutton gravy. So let's look at the masala mutton gravy recipe!


INGREDIENTS:


  • Mutton 1/2 Kg
  • Onion, roughly choppped, 3-4 
  • Tomatoes, roughly chopped, 3-4
  • Dry coconut, grated, 1/2 cup
  • Curd/yoghurt, 1/2 cup
  • Red Chilli Powder, 1 tspn
  • Coriander Powder, 1tspn
  • Ginger-garlic paste, 1 tspn
  • Salt, 1 tspn
  • Coriander Leaves, 1/2 cup
  • Garam Masala Powder, 1tspn
  • Oil, 1tblspn

RECIPE:
  • Marinate mutton with 1tspn of ginger-garlic paste and 1 tspn of salt, keep aside.
  • Take a vessel, add sufficient oil.
  • Fry grated dry coconut till golden brown, take them out and keep aside.
  • To the same oil, add onions and fry till golden browned.
  • Make paste of tomatoes.
  • Make a paste of fried coconut and onions.
  • Now in the same vessel or cooker, add 1 tblspn of oil.
  • Add the coconut onion paste and stir till the masala seperates from oil.
  • Add the tomato paste.
  • Add all the powdered masala i.e, red chilli powder, coriander powder, garam masala powder.
  • Fry till the oil comes on top. Stir occasionally.
  • Now add the well beaten curd.
  • Cook for 5 mins.
  • Now add the marinated mutton, stir for 5-7 mins on high flame.
  • Now add boiled water according to your preference to reduce thickness of the gravy.
  • Cook till the mutton is tender.
  • Check if the salt is in balance.
  • Masala Mutton gravy is ready!
  • Garnish with coriander leaves
  • Serve it with parathas or roti's.

Homemade Face Packs For Glowing Skin



With the so many products available around the market, we sometimes prefer going natural as natural things are free from side effects and we are not scared to try them out. So below are some of the face packs to try and leave those chemical face packs and bleaches behind.


Face Pack 1:
Milk Powder, Turmeric, Lemon Juice, Rose Water


  • Take 1 tblspn of Milk Powder, you can get it from nearby store.
  • Mix 1/2 tspn of turmeric powder.
  • Add 4-5 drops of Lemon juice.
  • Make a paste by adding rose water.
  • Rub this mixture over your face and neck for 2-3 minutes.
  • Allow it to dry for more 10 mins.
  • Wash your face with cold water.
  • Do this one a week.
  • Best for all skin types

Well, one of my cousin suggested me this and I thought of giving it a try. And I am impressed with the results. My skin is feeling soft an it gave an instant glow.😊


Face Pack 2:
Rice Flour, Milk, Lemon Juice
  • Take 1 1/2 tblspn of rice flour, you can make a rice flour at home. Just grind rice in a mixie to a fine powder.
  • Add milk gradually to make a thick paste.
  • Add 4-5 drops of lemon juice.
  • Apply it over the face and rub over blackheads, dark spots gently.
  • Keep this for 5 mins.
  • Wash off with water.
  • Do this oftenly.
  • Helps remove dark spots and dead skin cells.


Face Pack 3:
Multani Mitti (Fuller's Earth), Rose Water
  • Take 2 tblspn of multani mitti or Fuller's Earth in a bowl.
  • Add rose water to form a thick paste.
  • If you have dry skin, instead of rose water you can add milk.
  • Apply it evenly on your face.
  • Allow to sit until it dries.
  • Wash it off.
  • Do this once a week.
  • Best for oily and combination skin.

Face Pack 4:
Gram Flour (besan), Yoghurt, Lemon Juice
  • Take 1 tblspn of gram flour in a bowl.
  • Add well beaten yoghurt gradually to make a thick paste.
  • Add few drops of lemom juice.
  • Mix well and apply it on your face.
  • Wait till it dries naturally.
  • Wash it with cold water.
  • Do this once or twice a week.
  • A magical besan face pack to remove pimples marks, acne scars, dark spots and any other skin blemishes.


Face Pack 5:
Gram Flour, Tomato Paste, Lemon Juice
  • Take 1 tblspn of gram flour in a bowl.
  • Make a paste by adding tomato paste.
  • Add few drops of lemon juice.
  • Apply on your face.
  • Wait for 20-25 mins.
  • Wash with lukewarm water then woth cold water.
  • Do this twice a week.
  • Helps remove skin tan, blemishes.

Face Pack 6:
Gram Flour, Turmeric, Baking Soda

  • Take 1 tbspn of besan.
  • Add 1 tspn turmeric, 1/2 tspn of baking soda.
  • Make a paste by adding milk or rose water or a regular water.
  • Apply it evenly.
  • Leave for 25 mins, wash off with water.
  • Doing it once or twice a week cleanses and purifies the skin deep within.


Face Pack 7:
Fuller's Earth, Gram Flour, Egg

  • Take equal amount of gram flour and Fuller's Earth.
  • Beat an egg and add to it.
  • Mix it well.
  • Allow it to dry then wash with  cold water.
  • Do this every week.
  • This besan face pack tightens the skin pores, fills and smoothes lines, improve facial tone.

Methi Pulao (Healthy & Nutritious)



Whenever I'm in rush, I prefer cooking one pot meal. Methi Pulao is one of them, we all are aware of the nutritious value of methi. Methi is rich in amino acids that help in the production of insulin. It is an energy dense ingredient, therefore helps in keeping you full for longer. It is a good source of soluble fibre and is excellent for digestion. It is easy to cook and tasty to eat!
So let's get started with the cooking!


INGREDIENTS:


  • Rice, 2 Cups
  • Oil, 2tblspn
  • Onion, 2-3 finely chopped
  • Tomatoes, 3 finely chopped
  • Cloves, 2-3
  • Cinnamon stick, 1
  • Shahi Jeera
  • Bay leaf, 1
  • Fenugreek Leaves (Methi), as per your preference
  • Turmeric, 1/2 tspn
  • Red Chilli Powder, 1 tsp
  • Coriander powder, 1tspn
  • Salt, 1 tspn
  • Coriander leaves, 1/2 cup
  • Grarlic cloves  2-3 & Red chilli 1-2

RECIPE:
  • Wash and soak rice for 15 mins.
  • Make a paste of garlic & red chilli.

  • Powder whole garam masala i.e cloves, cinnamon, shahi jeera.
  • Take a vessel, add oil. When its hot add onions.
  • Fry the onions till golden browned.

  • Add garlic- chilli paste and fry till its raw smell goes away.
  • Add tomatoes.
  • Add all the powdered spices i.e powdered garam masala, turmeric, coriander powder, red chilli powder.


  • Cook till tomatoes become mushy and the oil seperates from the masala.
  • Add fenugreek leaves. ( I had some green beans left, I've addem them too).


  • Cook till it shrinks in its size. Mix well.

  • Now add the water, remember for 2 cups of rice 3 cups of water will be added (basmati rice). 1cup rice-1 1/2 cup water.
  • When water comes to boil, add soked rice.
  • Mix them all well.
  • Add salt.
  • When the water is dried, cover the vessel with its lid and keep some heavy object.
  • When air comes from sides, swith off the flame.
  • It's done!
  • Serve it with curd raita.

Notes:
  • Before adding seasonings, check if the oil is hot. It shouldn't be too hot or warm.
  • Whenever making biryanis or pulao, try adding freshly grounded ginger-garlic paste. It really enhances the taste.
  • Dont over cook the veggies.

Indian Cooking Tips & Hacks



There are so many ladies who struggle in kitchen as soon as they get up and run to kitchen. Many of us nowadays want simpler ways of doing everything. I've summed up some very useful cooking tips and hacks to avoid mistakes and reduce your time in the kitchen!
So let's get started!😊



COOKING TIPS:

  • Toasting nuts, rava before cooking with it, increases its flavor considerably.
  • Refrigerate vegetables and fruits wrapping in newspaper to keep them fresher for longer.
  • Add some hot oil in pakoda batter for making pakode crispier.
  • To make pooris crispy, add some hot oil to the dough while kneading, similarly you can add rava.
  • Sprinkle little salt to the oil before frying egg to prevent it from sticking to the pan.
  • While adding curd to biryani or gravies, beat it well and add it gradually.
  • Store nuts in an airtight container in the refrigerator to increase its shelf life.
  • Add little water to te vessel before adding milk, to prevent milk from burning and sticking to the vessel.
  • Add few teaspoon of hot oil with salt to the ginger-garlic and ginger-chilli paste to keep it fresh for longer.
  • Keep coriander leaves in an air tight plastic box in the refrigerator to keep them fresh for a long time.
  • To store fish longer and fresher, clean it, apply turmeric and salt and put it in the freezer.
  • Fry the ground masala on low flame to retain its color and taste.
  • Always make paste of ginger-garlic, in the ratio of 40:60 as ginger is stronger.
  • Always add boiling water to reduce thickness of the gravy.
  • Always make desserts with full cream milk to get the creamy texture.
  • Add few drops of lemon juice, and 1 tspn of oil while cooking rice to seperate each grain.
  • You can use leftover rice while making pakoda batter. It won't get noticed πŸ˜‰
  • When you cook chicken or meat, you should first cook over high heat to seal juices and then lower the heat and cook till tender.
  • To avoid kebabs from becoming hard and chewy, marinate them for a longer time and avoid over cooking them.
  • Always use heavy bottomed vessels to make desserts, in order to avoid burning.


COOKING HACKS:

  • To check if eggs are still edible, gently place raw eggs in a bowl of cold water to see if they’ve gone bad. If the egg sinks to the bottom, it’s a-OK. If it floats, it has gone bad.
  • To peel ginger, use stainless-steel spoon.
  • Prevent overboiling milk by placing a wooden spoon across a pot. Because wood is not a good material for conducting heat, the milk strays away from the handle.
  • When wooden spoons don’t exactly look (or smell) like they used to, boil them in a pot of water and leave them lying in the sun to dry.
  • Roll lemons before cutting them; doing so will extract more juice.
  • For soft parathas knead flour in some milk.
  • To keep the salad fresh, put some ice cubes on the covered dish.
  • Keep the flame high while making rotis, and cover it with white cloth for the softness.
  • Wrap banana stems with plastic to keep them fresh for longer.
  • Don`t store potatoes and onions together.
  • Put 2-3 cloves in the sugar to keep ants at bay.
  • To remove excess salt in the gravies, add a few small balls of chapati dough (kneaded) and boil the gravy or dal with it for 3-4 minutes. This helps to soak up the excess salt.
  • To prevent your hands from that burning sensation, keep a separate kitchen scissor to cut green chillies, and coriander leaves to avoid mess 😊
  • Use folk to make pakoda batter or beat eggs or any other batter to avoid lumps and making it frothy.
