Tahari is basically a Hyderabadi version of mutton pulao. Its aromatic and delicious treat for everyone who have it. So let's get started with the recipe with stepwise photos to understand better.
INGREDIENTS:
- Mutton, 1/2 kg
- Rice, washed and soaked 3 cups (1 cup= 250 gms)
- Ginger-garlic paste, 1 tspn
- Shahi jeera, 1/2 tspn
- Green chillies, 3-4
- Onion, sliced roughly, 3-4
- Tomatoes, roughly chopped 3-4
- Potatoes, 2 cut halved
- Curd/yoghurt, 1cup
- Red chilli powder, 1tspn
- Turmeric, 1/2 tspn
- Cloves, 2-3
- Bay leaf, 1
- Cinnamon, 1 stick
- Coriander and mint leaves, 1/2 cup
- Oil, 2tblspn
- Lemon, 1 tspn
RECIPE:
- Marinate mutton with Ginger-garlic paste and salt, keep aside for 1/2 an hour.
- In a vessel, add oil.
- Once it becomes hot, add in whole garam masala i.e shahi jeera, cloves, cinnamon, bay leaf. Stir for 30 secs.
- Add onions and fry till golden brown.
- Now add tomatoes and sliced green chillies.
- Add all the dried spices i.e red chilli powder, turmeric.
- Add potatoes.
- Add chopped mint and coriander leaves.
- Fry till tomatoes become tender.
- Add marinated mutton and fry on high flame for 10 mins.
- Now lower the flame and cook till mutton is tender.
- Add curd and cook till the oil comes on top.
- You can cook mutton in a separate cooker till its tender and add at the same stage mentioned above.
- Now add 6-7 cups of water. Check for salt and adjust.
- When the water comes to boil, add soaked rice. Lemon juice.
- Cook till all the water is dried. Lower the flame.
- Give 'dum' and wait till you see air coming from sides.
- Your delicious Tahari is ready.
- Serve it with curd raita.
