Its an easy and instant recipe for the morning or evening hungriness, easy and simple to make yet less time consuming.
Rava uttappam is surely worth to give a try!
It tastes great with green chutney, and goes equally well with tomato ketchup.

Ingredients:
- Rava/sooji, 1 cup (makes 3)
- Sour Curd, 1/2 cup (optional)
- Lemon juice, 2 tspn (if not adding curd)
- Salt, to taste
- Eno fruit salt/food soda, 1/4 tspn
- Onion, 1 finely chopped
- Tomato, 1 finely chopped
- Green chillies, 2-3 finely chopped
- Coriander leaves, finely chopped
- Oil, 1-2 tspn

Recipe:
- Take a bowl, add sooji.
- If you have sour curd, you can make a batter of suji adding curd, otherwise its completely ok to make a batter adding water.
- For 1 cup sooji, add one cup water. Keep it aside for 30 mins.
- Meanwhile, take a bowl, add chopped onion, chopped tomato, finely chopped green chillies and coriander leaves, mix all well.
- After 30 mins, you will see sooji has soaked up curd/water, add more water. The consistency should be likd that of a pancake, not too thick nor runny.
- Add fruit salt or soda, lemon juice and salt. Mix very well.
- Heat a non stick pan or a griddle, drizzle some oil.
- Take a ladle full of sooji batter, pour it on the pan, spread it a little. It should be little thick not thin like dosa.
- Now, take some onion tomato mixture and spread them over uttappam.
- Let the uttappam cook on low flame till golden brown, then flip it over on the next side.
- Cook till golden fried.
- Serve hot with green chutney or ketchup.

Tips:
- If you are not adding curd, make sure to add lemon juice.
- Adding fruit salt, makes fluffy and spongy uttappam.
- It takes more time than dosa to be cooked, so be patient, if you dont cook it well, it will be tasting like raw sooji.
- Discard tomato seeds and cut it finely for quicker cooking.
