Here's the new and aromatic recipe whiccan make your feast more delicious. So let's begin with the recipe, Kashmiri Rogan Josh!
- Ingredients:
- Fresh Meat, 1 Kg
- Oil, 3-4 tblspn
- Curd, 1 cup (250 ml)
- Onion, 5-6 finely chopped
- Ginger-garlic paste, 2-3 tspn
- Kashmiri red chilly powder, 1 1/2 tspn
- Garam masala powder, 1 tspn
- Coriander powder, 1 tspn
- Turmeric, 1/2 tspn
- Cumin powder, 1/2 tspn
- Black pepper 2-3
- Cloves 1-2
- Bay leaf, 1
- Shahi jeera, 1/4 tspn
- Cinnamon, 1 stick
- Salt, as per your taste
- Coriander leaves chopped
- Mint leaves
Category: Non Veg Gravy
- Recipe:
- Wash meat thoroughly, drain all the water.
- Marinate mutton with ginger-garlic paste and 1 tspn of salt.
- Heat oil in a pan, add whole garam masale to it.
- When they start to crackle, add chopped onions and fry till golden brown.,
- Now add the mutton with the marinade paste and stir fry on high flame for 2-3 mins
- Add ginger-garlic paste, fry for 2 mins.
- Add red chilly powder, turmeric, coriander powder, cumin powder and garam masala powder and fry till the oil comes up.
- Now add curd and salt as per your taste.
- Cover it with a lid and cook on low flame till meat is tender.
- You can adjust thickness of the gravy by adding boiled water. Rogan Josh is usually medium thick gravy.
- Garnish with chopped coriander leaves and some mint leaves.
- Serve it with phulka or chapati and as a side dish to pulao.

- Tips:
- Fresher the meat tastier the gravy.
- Always add boiled water when you want to reach the desired consistency of the gravy.
- Do taste the gravy before adding salt, as we have already added salt in the marination.
