Balushahi ( Badusha) Recipe Quick and easy


I am super excited to start this food and beauty blog. I would love to start my first post with this yummy sweet which is quite popular across India. Since I am a sweet tooth πŸ˜› I wanted to start off with a sweet...
So let's begin, I have taken step by step pictures to help you understand better.😊


  • Ingredients you will need:
  • All purpose flour (Maida),1/2 kg
  • Sugar, around 350 grams
  • Ghee, 2 tblspn
  • Chilled Curd or yogurt, around one cup (250 ml)
  • Almonds, thinly sliced
  • Baking soda, 1/4 tspn

Recipe:

  • Firstly, take a bowl and sieve all purpose flour to it.
  • Add baking soda.
  • Add unmelted ghee little by little and mix roughly with your hands, it should look like bread crumbs.
  • Then add well beaten CHILLED yogurt.
  • Remember you dont have to knead it into a dough, you just have to gather all the flour and yogurt with your hands roughly.
  • Add very little chilled water and mix the dough. Do not Knead it.
  • It should look flaky, not like a chapati dough.
(You can see flakiness in the dough)
  • Keep it covered with a damp cloth for 15 mins.
  • Till then make a sugar syrup by adding sugar and 200 ml of water.
  • Let the syrup come to two thread consistency.
  • Keep it aside.
  • Take a kadai, add oil.
  • You don't have to heat oil till its hot, it should be warm. Keep it on low flame.
  • Take a small portion of balushahi dough and roll in between your palm into a round shape and pat it between your both palms lightly.
  • Make a hole into it.
  • Make such balls from the remaining dough.
  • Add these balushahi's to the warm oil, it should sit in the bottom as shown in the picture.
You can see bubbles coming from them, that's the right temperature of oil.
  • It takes time because it should be cooked from inside and out. Let it cook patiently and once it turns golden brown turn them over.
(It took around 20 mins)
  • Let the balushahi cool down a bit.
  • If you add hot balushahi, it will break.
  • Add these balushahi's to the warm sugar syrup and keep it for 10 mins, strain and take out.
  • When you are ready to fry the second batch, make sure to let the oil sit till its warm.
  • After its done, take them into a serving bowl and garnish it with finely chopped dry fruits.
  • You can keep these balushahi's in an airtight container for 4-5 days.

Notes:
  • Add chilled yogurt to get the flakiness in the dough.
  • If the dough looks too much dry take very little water and mix with dough lightly.
  • Dont mix the dough too much.
  • Dont apply pressure while making balls.
  • Remember oil should be WARM when you add balushahi's to it, if balushahi's sits down at the bottom that means its the correct temperature of oil.
  • Fry them only on low flame.
